Chai Sugar Cookies

December 21, 2020 by SouthernShelle Leave a Comment

Confession:  sugar cookies aren’t my favorite cookie.  Probably not even in the top 10.   Why? Most of the time sugar cookies don’t taste like anything and then they are loaded up with sickly sweet icing.  Most of the time it’s a “no” from me.   But if you add in a bunch of spices and make the best royal icing in the history of royal icing recipes, then I can start to see the value of a sugar cookie.

Sugar Cookie Bars

May 27, 2019 by SouthernShelle Leave a Comment

Mmmmm sugar cookie bars.  Full disclosure, I am not a huge sugar cookie person.  I often feel like they exist to be a vehicle for frosting and {gasp!} I am not a huge frosting person either.   If we’re in the cone of trust: I scrape the cream out of Oreos. So how did I change my mind about sugar cookies?  Well it all started with a trip to the library. …

Coffee Glazed Spiced Cookies

May 23, 2019 by SouthernShelle Leave a Comment

Coffee, how do I love thee.  Let me count the ways. Hot, iced, cold brew, coffee glaze on cookies (or doughnuts or cakes!)   I am always excited to try a new way to consume my coffee. I wasn’t always this way. Before law school my main source of caffeine was Diet Coke.  I would drink the original coffee from Starbucks, but it needed to be souped up. Back then if I was drinking coffee, it was probably better classified as “coffee flavored milk”. …

Orange Shortbread Sandwich Cookies

May 16, 2019 by SouthernShelle Leave a Comment

I love a complicated cookie. It makes my baking heart swoon.  This one is doozy. Orange Shortbread with a decadent chocolate ganache filling.   From a pure baking standpoint, this cookie is so much fun to make! You’re rolling out dough, chilling for a while, using fluted cookie cutters, making a ganache.   The result is Magic. Joy. Happiness.

For my birthday last year, my brother got me a copy of Rebecca Firth’s The Cookie Book.*  Somehow I didn’t know about Rebecca or her blog, Displaced Housewife,  which is weird because I make it my business to know all of the cookie makers.   The cookbook itself is beautiful and there is a whole chapter just on chocolate chip cookies! (I am a huge fan of those Olive Oil Chocolate Chip Cookies)

I generally take all of the left over baking from this blog to my office.  I’ve developed a bit of a reputation as the cookie lady. A couple of my coworkers are my unofficial cheerleaders– they will make suggestions on things to try next and give actual constructive feedback on bakes. My favorite “cheerleader” is keeping an unofficial ranking of the best bakes and one day she mentioned that she didn’t think I would ever top the “Dr. Seuss Cookie”.  …

“Neiman Marcus” Chocolate Chip Cookie

February 20, 2019 by SouthernShelle 1 Comment

Beware– the beginning of this post is my cute anecdote about how my husband loves Oatmeal Chocolate Chip Cookies aka the “Neiman Marcus” Cookies.  If you’re here for the recipe, keep scrolling.

Just kidding,  I don’t actually have an anecdote.  Yes, my husband loves oatmeal chocolate chip cookies, this recipe is in his top 2 out of all of the chocolate chip cookies.  And he did sneak a ton of them and acted like I didn’t know how many cookies were missing {I did}. Basically if a recipe contains chocolate in it, then he’s game.  He loves these brownies and is crazy about this cheesecake. He’s a simple guy.…

The {Great} Chocolate Chip Cookie Challenge

February 18, 2019 by SouthernShelle 9 Comments

Have you ever searched for a chocolate chip cookie recipe on Pinterest?  You will find 8 million recipes all declaring that this recipe is in fact THE BEST EVER.   Basically, some of y’all are lying. Especially since every recipe isn’t my favorite, the New York Times Chocolate Chip recipe.  {side bar} If I ever crossed paths with Jacques Torres, I would make a damn fool of myself. A. Damn. Fool.

I did an unofficial poll of my friends and the results weren’t surprising either people loved the  Toll House Recipe or they have been infected by my fangirling and like the New York Times recipe. One of my 2019 baking goals is to expand my chocolate chip cookie horizons and try one of the million chocolate chip cookies on the internet.…

Homemade Moon Pies

January 23, 2019 by SouthernShelle Leave a Comment

This post is going to be all about my trip to the grocery store to buy the ingredients for Moon Pies.   I consider myself “old school” when it comes to the grocery store. There’s always a handwritten list in the order that you go through the grocery store (produce first, frozen food last).  When I am making a new recipe the first time, I write out the whole recipe and then cross off the things I already have (like flour and butter).…

Peppermint Triple Chocolate Chip Cookies

December 19, 2018 by SouthernShelle Leave a Comment

A few of you know that this blog isn’t really new.  It started back in 2011 during the gap period after law school when I was desperately looking for a job.  I didn’t plan much in the beginning.  My only goal was to do something else during the day besides the soul-crushing process that is job-hunting in a terrible legal market. I was a girl with a small apartment kitchen, an iPhone 4 and a couple of kitchen towels from Target for “props”….

Double Biscoff Cookies

December 17, 2018 by SouthernShelle Leave a Comment

I had my first Double Biscoff cookie two years ago. My coworkers and I started hosting semi-regular baking events.  Okay, so I think I might have been the ring leader, but no one was complaining 🙂   The idea was simple, everyone brings in their favorite dessert based on a theme.  Think pies on Pi Day.  That kind of thing.  It was a fun office.

Gingerbread Biscotti

December 13, 2018 by SouthernShelle Leave a Comment

Tis the season for all of the Gingerbread things!  Look at this hottie Gingerbread Biscotti.

Confession time:  I checked out the King Arthur Flour Cookie Companion Cookbook from the Wake County Public Library 6 weeks ago.  The book is sitting with my other cookbooks on my bookshelf.  It’s pages have  post-it notes attached bookmarking the cookies I want to make next.  And notes. Lots of notes.  This is not my cookbook.

Anytime I think I might return it, I try something new and then extend my reservation for an additional two weeks.  I hope Santa Claus is paying attention, because clearly I need this baking book in my life….

Hey, Y’all

I'm Richelle. I'm a working mom that got bit by the baking bug. When I'm not doing my day job, or cutting strawberries for my 5 year old, I'm probably in the kitchen throwing together some combination of flour, sugar and butter. Welcome to my baking journey.
