    Oatmeal Chai Chocolate Chip Cookies

    Oatmeal Chai Chocolate Chip Cookies takes a normal oatmeal chocolate chip and takes it up a couple of clicks.  The warmth of the chai spice mix makes this the perfect breakfast cookie or anytime cookie. This recipe makes a thin, but chewy cookie that will disappear faster than you can imagine. 

    Disclaimer: 

    The “chai” spice mix is not by any stretch of the imagination “authentic”, but the combination of spices adds a nice warmth to a standard oatmeal chocolate chip cookie.  Be warned that the 6 and under set gave this cookie a thumbs down– but that’s because there was a strong aversion to the presence of oatmeal in a cookie.  

    Ingredient Considerations

    For the oatmeal, I used old fashioned oats instead of instant.  I’m not saying that instant oats won’t work, I’m just saying that I don’t know what will happen if you swap it out. 

    For the chocolate chips, I used a mix of semi-sweet chocolate chips and 60% dark chocolate chips because I like the way the dark chocolate cuts some of the sweetness of the semi-sweet  chip.  I also pressed a few chocolate chips onto the top of the cookies as soon as they came out of the oven so that people clearly notice that this cookie does not have raisins in it. 

    The Chai Spice: 

    The chai spice mix that I use includes ginger, cinnamon, cardamom, cloves, nutmeg and white pepper.  For the exact measurements, check out the recipe here. 

    The recipe calls for 2 teaspoons of chai mix, but honestly it could probably have a touch more.  Season with your hearts. 

    Make sure that if you are buying the chai spice that whatever you get does not have sugar in it because the recipe has enough sugar, I promise.   Check out the labels before using chai spice drink mix.

    Description

    A thin and chewy oatmeal cookie amped up with chai spices.


    Ingredients

    1 ½ cups all purpose flour

    1 teaspoon baking soda

    2 teaspoons chai seasoning

    ½ teaspoon salt

    14 tablespoons unsalted butter, softened

    ¾ cup brown sugar

    ½ cup granulated sugar

    2 eggs

    1 teaspoon vanilla extract

    3 cups old fashioned oats

    1 cup chocolate chips


    Instructions

     

    1. Preheat the oven to 350ºF

    2. In a medium bowl, combine the all purpose flour, baking soda, chai spice mix and salt.  Set aside. 

    3. In a large bowl mix the butter, brown sugar and granulated sugar until creamy.  Then add the eggs and vanilla extract.  

    4. Add the flour to the butter mixture and stir until completely incorporated. 

    5. Pour in the oats and chocolate chips.  Mix on low speed until combined. 

    6. Drop the cookies by tablespoon (either using a tablespoon or a cookie scoop) onto a cookie sheet lined with parchment paper.  Leave about 2 inches around each cookie to allow for the spread.   

    7. Bake for 9-12 minutes, or until the cookies are lightly browned.  

    8. Cool on the cookie sheets for 5 minutes before removing to a wire rack.  

    9. Store the cookies in an airtight container.
