No Buttermilk Waffles

 Hey Y'all. 

Everyone needs a homemade waffle recipe.  This is my current favorite no buttermilk waffle recipe. These waffles are easy to whip up and packs a punch with a little cinnamon and maple syrup in the batter.

DISCLAIMER
This waffle batter features the trifecta of  maple syrup, vanilla extract and cinnamon.  I eat these plain, but they are great with chocolate chips, blueberry topping and fried chicken tenders.  Do what you need to do here. Okay?

The Ingredients

 *This recipe does NOT call for Buttermilk*  When we lived in Maryland it was so hard to get buttermilk– that I am always trying to create recipes without it. You can make this waffle recipe with a well-stocked pantry.

  • Flour
  • Baking powder
  • Salt
  • Brown sugar
  • Cinnamon
  • Milk, any percentage
  • Eggs
  • Melted unsalted butter
  • Vanilla extract
  • Maple syrup

Equipment

Obviously you need a waffle maker to make waffles. That’s how that works. If you’re in the market for a new waffle maker, here are a couple of reviews of waffle makers to browse.  Serious Eats. Good Housekeeping. CNET.   I have the All-Clad Belgian Waffle Maker.  It’s pricey, but produces an evenly baked waffle with various levels of crispiness.  I love that it has four squares,  which means my whole family can eat waffles in a batch.  My only complaint is that it’s hard to clean the overfill section.   

The only other special equipment is a decent sized ladle – or a measuring cup– to put the waffle batter in the waffle iron, two bowls, measuring cups and a whisk.  Easy. Peasy. 

The Instructions

I’ve seen several waffle recipes that basically have you mix the dry ingredients together in one bowl,  whisk the wet ingredients together in another and then mix it all together.  I did that for the first batch and there was something weird going on when I whisked the eggs, milk and melted butter together.  Perhaps the melted butter was too warm to mix.  Because as soon as I poured it in with the milk, the butter  started to harden in clumps in the bottom of the bowl.  YIKES.  The lesson here friends is to either let the melted butter cool all the way down OR if you’re impatient like me, pour it in last. 

So here’s what you need to do: 

First you whisk the dry ingredients (flour, baking powder, salt, brown sugar and cinnamon) together in a large bowl set aside.

Then whisk the eggs, milk, vanilla extract and maple syrup together. Pour this mixture into the dry mix and whisk together.   Then slowly stream in the melted butter and mix until smooth. 

PRO TIP: 

Turn your oven on 200ºF before you get started to act as a warming drawer {unless you have a warming drawer} as you’re making batches of waffles.  I place an oven safe cooling rack in a cookie sheet so that the warm air in the oven circulates.  No soggy waffles at my house.

This is a non exhaustive list of things you could put on a waffle besides maple syrup: 

  • Peanut butter + banana + honey
  • Nutella + fresh strawberries + whipped cream
  • Fresh Fruit
  • Chocolate Chips
  • Blueberry Topping
  • Bourbon Pecan Topping + Whipped Cream
  • Bacon Crumbles + Maple Syrup
  • Strawberry Jam

A no-buttermilk classic waffle recipe.

Ingredients

1 ¾ cup (220g) all purpose flour

2 tablespoons (25g) brown sugar

1 tablespoon baking powder

½ teaspoon salt

1 teaspoon cinnamon (optional)

3 large eggs

8 tablespoons melted butter

1 ½ cup milk

1 tablespoon vanilla extract 

1-2 tablespoons maple syrup (optional)

Instructions

  1. Preheat the oven to 200ºF and heat waffle iron according to manufacturer instructions.
  2. In a large bowl whisk the dry ingredients(flour, brown sugar, baking powder, salt and cinnamon) together and set aside. 
  3. In a large measuring cup stir together the eggs,milk, vanilla extract and maple syrup. 
  4. Create a well in the flour and pour in the milk mixture.  While whisking the batter together, slowly pour in the melted butter.  Stir until smooth. 
  5. Ladle the batter into the waffle iron and cook until desired doneness. 
  6. Place the finished waffles on a cookie sheet and set in the warmed oven until you’re ready to serve.
  7. Serve with maple syrup, blueberry topping, Pecan topping, or fresh fruit
