Oatmeal Chai Chocolate Chip Cookies

Description

A thin and chewy oatmeal cookie amped up with chai spices.


Ingredients

1 1/2 cups all purpose flour

1 teaspoon baking soda

2 teaspoons chai seasoning

1/2 teaspoon salt

14 tablespoons unsalted butter, softened

3/4 cup brown sugar

1/2 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

3 cups old fashioned oats

1 cup chocolate chips


Instructions

 

  1. Preheat the oven to 350ºF

  2. In a medium bowl, combine the all purpose flour, baking soda, chai spice mix and salt.  Set aside. 

  3. In a large bowl mix the butter, brown sugar and granulated sugar until creamy.  Then add the eggs and vanilla extract.  

  4. Add the flour to the butter mixture and stir until completely incorporated. 

  5. Pour in the oats and chocolate chips.  Mix on low speed until combined. 

  6. Drop the cookies by tablespoon (either using a tablespoon or a cookie scoop) onto a cookie sheet lined with parchment paper.  Leave about 2 inches around each cookie to allow for the spread.   

  7. Bake for 9-12 minutes, or until the cookies are lightly browned.  

  8. Cool on the cookie sheets for 5 minutes before removing to a wire rack.  

  9. Store the cookies in an airtight container.
