    M&Ms Brownie Cups

    A delicious assortment of freshly baked M&M's brownie cups, featuring rich, gooey brownie bases topped with colorful M&M candies.

    We love brownies over here!  [See the Great Brownie Challenge]. Brownies come in so many forms: cakey, fudgy and chewy, but at the center of them all is the chocolate.  We’ll take brownies in all forms, but lately we’ve been loving mini brownie cups.. These bite-sized delights combine the best of brownies: the fudgy centers and chewy edges. 

    I love a  gooey fudge center and crisp/chewy edge. To maximize those glorious chewy edges,  I took a brownie cookie recipe and  baked it in a mini muffin tin.  The result: all of the crispy edges I love with a nice chocolatey chewy center.  It’s an all around win-win.  The mini M&Ms are a colorful bonus!  You can use regular or more festive  holiday mini M+Ms to amp up the holiday experience.

    Brownie Cups versus Brownie Bites?

    What is the difference between a brownie cup and a brownie bite?  Technically nothing.  I named these brownie cups because of the way the brownies indented just enough at the top making them look like tiny cups.  What you can expect is a fudgy interior with crisp edges and a shiny top.

    Here’s what you need to know about M&M's Brownie Cups

    M&M brownie cups are a one-bowl recipe with a short chilling period.  You just need a mini muffin tin and restraint.  Seriously, these are going to disappear so fast!

    Ingredients for Brownie cups which include: flour, brown sugar, granulated sugar, cocoa powder, melted butter, 1 large egg,. vanilla extract, mini semi-sweet chocolate chips and mini M&Ms. (not pictured baking powder and salt)

    Ingredients:

    • Melted unsalted butter
    • Brown sugar
    • Granulated sugar
    • Large egg
    • Vanilla extract
    • All purpose flour
    • Cocoa powder 
    • Baking powder
    • Salt
    • M&M minis
    • Chocolate chips

    Necessary Equipment: 

    • 2 -24 well mini muffin tins
    • A large bowl 
    • Measuring spoons/ cups
    • Spoon/whisk/flexible spatula 
    • Small Cookie Scoop or Tablespoon
    • Cooking Spray   

    How to Make M&M's Brownies Cups 

    1. Mixing the Batter:
    A large glass bowl with granulated sugar and brown sugar. Off to the side are a wire whisk and a flexible spatula.

     In a medium bowl, stir together the melted butter and granulated sugar and brown sugar until smooth. Then stir in the egg and vanilla extract. Stir in the cocoa powder until smooth, then add the flour, salt, and baking powder. Fold in half of the M&Ms and all of the chocolate chips.

    1. Chilling and Preparing:
    The flour is added to the mixture, and is stirred with a flexible spatula.

    Cover the bowl and refrigerate for at least one hour. Heat the oven to 325ºF. Spray a mini cupcake tin with cooking spray.  Use a medium cookie scoop or tablespoon to fill each mini muffin well three-quarters of the way full.

    1. Baking:

     Bake for 9-12 minutes. Press a few of the reserved M&M minis into each brownie while they are still warm. Cool in the pan before serving.

    Variations– So many possibilities!

    Using the same brownie batter you could make these into so many amazing versions: 

    • Holiday Minis-- grab a bag of seasonal M&Ms for a bit of extra holiday cheer!
    • Mexican Chocolate: 1 teaspoon cinnamon + pinch of cayenne pepper 
    • Mocha Brownies: 1 tablespoon  of espresso powder + chocolate chips
    • Peanut Butter:  Press a mini Reese's peanut butter cup into each brownie cup while they are still warm. 
    • Salted Caramel Brownie Cups:  Trader Joe’s Salted Caramel Chips + dark chocolate chips

    Storage: 

    Store the brownie cups in an airtight container at room temperature for up to 4 days.

    Questions and Answers: 

    How Long to Bake Brownie Cups? 

    Bake the brownie cups for 9 to 12 minutes at 325ºF. 

    Why did my brownie cups get stuck in the pan?

    Probably because you didn’t grease your muffin tin enough.  Make sure that you coat both the inside of each well, but also the top edges of each well.  So that the brownie cups can just slide out. 

    Can Make Brownie Cups from a Box Mix?

    Obviously! Yes!  If you make these using a box mix, skip the chilling step and fill each muffin tin ⅔ of the way full.

    Description

    Bite sized brownies with the slightest indention in the top making them look like “cups”.  Featuring crisp edges and a fudgy center.


    Ingredients

    • ¾ cup (12 tablespoons) melted unsalted butter

    • ¾ cup (160 grams) brown sugar

    • ½ (100 grams) cup granulated sugar

    • 1 large egg

    • 1 teaspoon vanilla extract

    • 1 ½ cups (188 grams) all purpose flour

    • ½ cup (50 grams) cocoa powder

    • 1 teaspoon baking powder

    • ½ teaspoon salt

    • ½ cup (109 grams) M&M minis

    • ¼ cup (58 grams)mini semi-sweet chocolate chips


    Instructions

    1. In a medium bowl, stir together the melted butter and granulated sugar and brown sugar until smooth.

    2. Then whisk  in the egg and vanilla extract, the mixture will lighten slightly. 

    3. Stir in the cocoa powder until smooth, then add the flour, salt and baking powder.  

    4. Fold in the M&Ms and  the chocolate chips. 

    5. Cover the bowl and refrigerate for at least one hour. 

    6. Heat the oven to 325ºF. 

    7. Spray a mini cupcake tin with cooking spray. 

    8. Fill each mini muffin well three quarters of the way full. 

    9. Bake for 9-12 minutes.  The brownie cups will rise slightly and the edges should look done.  Remove from the oven and set the pan on a wire rack. 

    10. Let the brownies cool slightly in the pan, about 15 minutes before removing them from the pan.  Serve warm or at room temperature.
